I’m running a multiple day event and start/end times aren’t relevant for the signups I’m taking. I’d like to be able to hide these fields. I bought the customizer add-on, but it doesn’t seem to do this.

This is already possible.
Set the “show_time” argument to “no” in the shortcode to hide start/end times.
Easiest way to create your shortcodes is by installing the PTA Shortcodes plugin:
