Is it possible to have the sign up sheet show correctly on a mobile device? It looks ok on computers and tablets but once you move to a mobile device it overwrites words located in the adjacent fields. We have the calendar plugin and that works well on the mobile side.

Yes. You could do it with your own custom CSS, since it’s just a simple table display and the way it appears is mostly due to how your theme displays tables via its CSS.
Or, if you want something quick and simple to collapse tables for mobile view, I already have a jQuery solution for free here:
